BJCP Style: 25B - Saison
The saison style is split into 3 sub categories: Table, Standard, and Super with corresponding ABVs. This one is the middle version and should come out between 5 and 6% ABV.

- 2020-7-11: Brewday
- Malt: CO Proximity Pils
- Hops: [Nugget] (Sorachi Ace) {Hallertau Blanc}
- Yeast: Belle Saison
- OG: 11.6°P; FG: 1°P; ABV 5.6%
- 2020-7-13: dry hopped; 72g HB
- 2020-7-15: cold crash
- 2020-7-17: kegged
New Cereal Killer mill. Not as blazing fast as the old 3 roller Monster Mill but it does actually work so it's got that going for it which is nice.
2020-7-13 (+2): Fermentation slowed. Added 72g (3g/L) Hallertau Blanc
2020-7-17 (+6): cold crashed (7/15) to drop out the dry hops then kegged. This seemed done enough (Belle Saison works fast) so I went ahead and keezered it.
2020-7-22 (+11): Sample. Still hazy even though it got a dose of gelatin. Hoppy with some saison peppery notes. A bit yeasty still but getting there. Very dry.
2020-7-28 (+17): Clarity check. Getting there. Tasting cleaner but maintains a nice balance of peppery spicy saison yeast character and hops.
2020-8-1 (+21): Full pour, mostly clear, very dry, and going down super easy. Tasty Belgian/American crispy boi saison!
